How to take advantage of leftover bread and dry rolls

Bread is one of the foods that most often ends up in the trash because it dries or spoils before it is consumed. Luckily there are many ways to take advantage of that bread that you have left over.

How to take advantage of leftover bread and dry rolls

No matter how hard you try, it happens over and over again, bread and muffins age, dry out, and get thrown away. However, the bread old and dry toast, brown bread and rolls can be exploited easily and not just to make breadcrumbs.

5 WAYS TO TAKE ADVANTAGE OF LEFTOVER BREAD

Dry bread is tasty again if you heat it in the toaster or oven and then spread it warm with a vegetable pate or olive oil. If you want to try other things, you can be inspired by the following five recipes:

1. CROUTONS MADE WITH STALE BREAD

Homemade croutons taste delicious in a salad or soup, and they’re so easy to make.

Cut the dry white bread or toast into cubes and toast them in the pan with a little olive oil until crisp.

2. BREAD SALAD (“PANZANELLA”)

No matter what kind of bread it is, any of them can be used to make the Italian bread salad called panzanella.

To make it, cut the salad bread into cubes and toast them in the pan with garlic and olive oil. With fresh tomato, onion, basil and a vinaigrette it becomes a delicious summer dish. There are many varieties of bread salad:

  • Mediterranean bread salad with arugula, tomato, pine nuts, onion, garlic, Parmesan and basil.
  • Oriental bread salad (fattouche) with flat bread, cucumber, pepper, tomato, onion, parsley, mint and ras el-hanout (Moroccan mix of spices).
  • Bread salad with tomatoes, chives and cheese.
  • Greek bread salad with carrots, tomatoes, onions, capers, olives and pecorino cheese.
  • Autumn bread salad with apples, walnuts and chicory salad.

3. TOAST CHIPS MADE WITH STALE BREAD

For the bread chips you need very thin slices of bread, which you then place next to each other on a tray lined with parchment paper.

Brush the toasts with olive oil and sprinkle with herbs and garlic. Bake at 180 degrees for eight to ten minutes. Bread chips pair well with various sauces for an appetizer.

4. FRENCH TOAST

What used to be “poor man’s food” is now a delicious way to use up leftovers. For torrijas you can cut the dry bread or white bread in half and soak it in a mixture of 300 ml of milk, two eggs, and 20 g of sugar and a pinch of vanilla. The mixture is enough for about six slices of bread. Fry the bread in the pan and enjoy the French toast with cinnamon, ice cream or other side dishes.

5. TURN OLD BREAD INTO BREADCRUMBS

Cut the dry bread into slices and let it dry completely in the air or in the oven. Then put it in the processor. If you store it tightly, the breadcrumbs will last for several weeks.

DISCARD MOLDY BREAD

Moldy bread should go to the trash, no buts or penalties. You should completely discard the bread, and not just cut off the moldy corner, because the mold spores may have already spread all over the bread even if you can’t see them.

HOW TO STORE BREAD CORRECTLY

The best way to avoid stale bread scraps is to buy just the right amount. Before you go shopping, calculate how much bread you will eat for the next few days. Do not buy it in bulk or by intuition. Once the bread is at home, its duration will also depend on the correct storage.

Bread is best stored in a bread bin made of clay, wood, or steel. When purchasing a bread basket it is important that the material is breathable or that the box has ventilation holes. This allows moisture to escape from the bread and delays mold growth.

WHY DOES THE BREAD GET STALE?

Fast stale bread is an indicator of poor quality. The reason is that these 24-hour maximum breads are too rich in starch and have not been baked long enough, so they retain a degree of moisture that, as it is lost, causes the starch to harden.

On the other hand, whole meal bread, with a prolonged fermentation, is drier when it comes out of the oven, while still being tender, and remains that way for much longer.
