Raw foods retain properties that are lost when cooked. Our collaborators, dietitian-nutritionist Carla Zaplana and chef Javier Medvedovsky explain their vision of raw food to us.
Carla Zaplana is a dietitian, nutritionist, and health mentor. He explains that raw food activist David Wolf passed on to him the passion and desire to try “live food.” At that time I lived in San Diego, California, and the weather invited you to try it.
“It gave me energy, vitality, lightness and flexibility. I would recommend this style of eating to people who need to do a reset to gain health and vitality very quickly. In case of being underweight, in a cold climate or have a vata constitution (according to doshas in ayurveda) I would not recommend it. “
“I’m not raw vegan,” he adds, “because I like to eat foods that require cooking, but not a day goes by that I don’t eat raw food, and in spring and summer I eat only raw for days in a row without realizing it. It makes me feel good. And it brings me clarity of mind. “
CARLA ZAPLANA’S FAVORITE RAW VEGAN RECIPE
Raw lime pie
For the base:
- 1 cup of crushed hazelnuts
- ½ cup of grated coconut
- 8 crushed pitted Medjool dates
- The skin of half a grated lime
- Salt
For coverage:
- The pulp of 5 avocados
- The juice of 6 limes
- 75 ml maple syrup
- The skin of half a grated lime
- Salt
Preparation
- Knead the ingredients of the base in a bowl and shape it with a cake tin.
- Beat the ingredients of the topping until you get a cream.
- Pour it over the base and put the cake in the freezer for an hour. Take it out 15 min before serving.
THE RAW DIET HELPED JAVIER MEDVEDOVSKY OVERCOME HIS HEALTH PROBLEMS
Javier Medvedovsky is chef, teacher and author of Espiritual chef (Editorial Urano). She explains that at one point in her life she was looking for answers and, among other things, she wanted to know which foods provided health and energy and which ones were more in tune with us.

That awareness goes hand in hand to do well. It’s a very peaceful diet. “In Javier’s case, the raw vegan diet has helped him solve digestive problems and gain more energy.
“The senses are also refined and, among many more things I can say, it would highlight great improvements in the skin. It is a rejuvenating diet,” he adds.
