Carla Zaplana is a dietitian, nutritionist, and health mentor. He explains that raw food activist David Wolf passed on to him the passion and desire to try “live food.” At that time I lived in San Diego, California, and the weather invited you to try it.

“It gave me energy, vitality, lightness and flexibility. I would recommend this style of eating to people who need to do a reset to gain health and vitality very quickly. In case of being underweight, in a cold climate or have a vata constitution (according to doshas in ayurveda) I would not recommend it. “

“I’m not raw vegan,” he adds, “because I like to eat foods that require cooking, but not a day goes by that I don’t eat raw food, and in spring and summer I eat only raw for days in a row without realizing it. It makes me feel good. And it brings me clarity of mind. “

Javier Medvedovsky is chef, teacher and author of Espiritual chef (Editorial Urano). She explains that at one point in her life she was looking for answers and, among other things, she wanted to know which foods provided health and energy and which ones were more in tune with us.

“This is how, suddenly, between so much diet and so many theories, I came across living food,” he recalls. “It was love at first sight. It was very obvious and logical for me to make the decision to immerse myself in it. I was also very impressed by its culinary side, because all that knowledge had not been taught to me in cooking school.”

“Living food gives you the will to live, and that desire, together with the energetic potential that” living foods “have, provide you with spiritual growth, generating more awareness and sensitivity in everything you do. And eating in this way also provides sustainability Well, you wonder where what you eat comes from, and not only that, but also many other things, such as what projects are you supporting, or not, with your money. You realize that your vote matters and therefore, has a very positive influence on the transformation of society, making it healthier and fairer for future generations, “he adds.

“It can provide you – he continues – a lot of well-being at the level of detoxification, regeneration, healing … Also, thanks to it, you connect more with nature, because you manipulate and eat the raw fruits that it gives us. That awareness goes hand in hand to do well. It’s a very peaceful diet. “In Javier’s case, the raw vegan diet has helped him solve digestive problems and gain more energy.

“The senses are also refined and, among many more things I can say, it would highlight great improvements in the skin. It is a rejuvenating diet,” he adds.

  • Sprouts: “They are incredible. Watching them grow thanks to your own care gives you interesting experiences.”
  • Fermented: “They open us up to an impressive world. They have medicinal value and provide surprising flavors.”
  • Pates: “For me, pates are like crushed salads that can be spread (on a dehydrated one, for example).”
  • Dehydrated: “I like that they are crunchy, they go well with fresh ones and they make it easier for you to eat a raw vegan diet.”
