BUYING AND USING PUMPKIN SEED OIL

PUMPKIN SEED OIL PESTO
INGREDIENTS (SERVES 2):
- 4 tablespoons pumpkin seed oil
- 2 tablespoons of virgin olive oil
- 100 g of pumpkin seeds
- 1 clove garlic
- 1 bunch of basil
- 2 tablespoons Parmesan
- 1 tablespoon of olive oil
- Juice of half a lemon
- 1 pinch of salt
- 1 teaspoon of coarse black pepper
Elaboration:
- Toast the pumpkin seeds in a nonstick skillet without adding oil.
- Wash the basil, shake it dry, and place the leaves in the food processor.
- Coarsely grate the Parmesan.
- Wash the lemon with hot water, cut it in half and squeeze out the juice.
- Peel and chop the garlic.
- Add the pumpkin seeds, garlic, pumpkin seed oil, cheese, olive oil and lemon juice to the glass of your processor and mix finely with the basil.
- Season to taste with salt and pepper.
- You can store it in a glass jar with a screw lid. The pesto will keep for 2-3 days.
PUMPKIN SEED OIL DRESSING
Ingredients (for 2 people):
- 2 tablespoons pumpkin seed oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon of runny honey
- 1 tablespoon sour cream
- 1 tablespoon Greek yogurt
- 1 shallot
- 2-3 stalks of parsley
- 1 lime
- 1 pinch of salt
- 1 teaspoon of coarse black pepper
Elaboration:
- Wash the lime in hot water and squeeze out the juice.
- Peel and finely chop the shallot.
- Wash the parsley, pluck it from the stem, and chop the leaves into small pieces.
- Mix the pumpkin seed oil and apple cider vinegar with the sour cream and yogurt until smooth.
- Add the lemon juice and honey, then add the shallot and parsley. Season to taste with salt and pepper.
PUMPKIN SEED OIL MARINADE
Ingredients (for 2 people):
- 2 tablespoons pumpkin seed oil
- 1 tablespoon rapeseed oil
- 1 teaspoon Dijon mustard
- 1 organic orange
- 1 small piece of ginger
- 1 clove garlic
- 2 coriander stalks
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried rosemary
- 1 teaspoon thyme, rubbed
- 1 pinch of salt
- 1/2 teaspoon cayenne pepper
Elaboration:
- Wash the orange, cut it in half, grate it and take two tablespoons of this zest, then squeeze it. Peel and finely chop the ginger and garlic. Wash and finely chop the coriander.
